Tabouleh is probably the best-known Arab salad. In Morocco (and generally in North Africa) it is made with couscous, in other countries it is prepared with bulgur instead. All versions have one thing common: they use a lot of parsley. My interpretation is a simple couscous salad with less parsley. It's ready in no time and you only need a few ingredients. It is perfect for a picnic in the park, a barbecue party or simply as a quick lunch or dinner.
This chickpea tajine with a sweet onion sauce is loaded with protein and a quick lunch or dinner for stressful days. You can prepare the onion sauce the day before or even freeze it. For the tajine, you then only have to mix in the chickpeas, prepare some couscous or rice and it is ready!
