Roasted Carrots and Green Beans. (Tried it - with new summer carots, but without beans. The carrots turned out so delicious, and it was a super easy side dish to make as well. Will definitely make again, hopefully next time with beans.
Carrot Rice - fragrant basmati rice sauteed with carrots, onions, fresh ginger, peanuts, and cilantro. I used brown basmati rice and also used both peanuts and cashews. I also skipped the cilantro. Fragrant and a nice change from plain rice.
