Mangold gehört mit seinen bunten Stielen und den filigran gemusterten Blättern wohl zu den ästhetischten Gemüsesorten des Sommers! Vor allem in roher Form haben die gelben, roten oder pinken Stiele (je nach Sorte) eine wunderschön leuchtende Farbe. Die Blätter werden im heutigen Rezept zu einem würzigen Pesto verarbeitet, die Stiele roh mariniert. Das Ganze passt zu einem sommerlichen Bulgursalat mit buntem Gemüse!
