Easy Mexican Caramel Sauce and Banoffee Trifle for your next Party! - Deliciously Directionless

Good morning! I am back from my fabulous Bangkok break (courtesy Tourism Authority of Thailand) and I shall be posting about it in detail soon. Meanwhile, here’s a sneak peek. Since Christmas is nearly upon us, I thought I’d share a recipe to make a very simple, yet impressive dessert – the Banoffee Trifle. This happened quite by chance since I had received a complimentary pouch of goat’s milk from Local Banya (which by the way, I totally recommend – they have made my life so much simpler!)…

Eternal Sunshine of the Lemon Kind - Deliciously Directionless

Lemon Curd is the closest that we have to sunshine in a jar, don’t you think? It’s sweet and tart and adds a delicious zing to many desserts. Layer it in a cake or top your breakfast pancakes with it. Or serve it along with scones for a variation on the English Cream Tea. Fill up little tart shells with it or use it as an éclair filling. Or simply slather it on toast! It’s such a versatile spread and it’s very easy to make. I have waxed eloquent about lemons in one of my earlier posts and…

Chocolate Brownies with Amaranth Flour - (nearly) Gluten-Free Recipe - Deliciously Directionless

It’s been a (long) while since my last post – just got a bit busy with some new writing projects and was felled by a brief illness 🙁 But tomorrow is World Baking Day and I absolutely had to bake. So here I am with a new recipe! This time I have decided to experiment with alternative flours. No, I am not on any gluten-free diet; I just wanted to try baking with something other than the all-purpose flour. I decided to work with amaranth flour, what is known as rajgira in India. I love rajgira…

Fairtrade Products + an easy Recipe for Coconut Scones - Deliciously Directionless

While I plot my next travel plans, I thought I’d share a recipe with you folks; also since it’s been a while since I posted a recipe! Not that I haven’t been busy in the kitchen, which you would know if you follow me on Instagram 🙂 The impetus for this recipe came in the form of a box full of goodies from Fairtrade India – some green tea, basmati rice and two types of sugar (icing sugar and caster sugar). When I saw the sugar packets I realised how long it was since I had baked anything, so…

The festive season is well and truly upon us. December is a month of indulgence; so many parties, weddings, events (UpperCrust Magazine’s 10th Food & Wine Show is taking place in Mumbai this weekend) and of course Christmas! Festive baking is one my favourite things to do and I just love how the kitchen fills up with the aromas of cinnamon, raisins and gingerbread, not to mention mulled cider on the side… This year, I decided to bake something I had never tried before. After watching several…

Orange Cake with Chocolate Ganache - Deliciously Directionless

It’s Christmas Eve and even Mumbai has a bit of a nip in the air, albeit only in the nights and early mornings. Right now I’m looking forward to spending Christmas and bringing in the New Year in Bangalore and Coorg. But before I leave for my holiday, here is another festive baking recipe for you. I baked this for my dad’s birthday yesterday and it was a hit! I admit that I’m a bit obsessed with oranges these days, but this time I decided to add a chocolate ganache as well. I also used up…

Gingery Ginger Cake - Deliciously Directionless

And I’m back with another baking post! It was perfect baking weather early this week; rain-soaked days – what better to do than bake a cake. For the longest time, I had wanted to try a Ginger Cake recipe that I had stumbled across while randomly web-surfing, but for some reason or the other it was being pushed to the back. So this week I hunted for the piece of the paper on which I had scribbled the recipe and had a go. Though the recipe didn’t call for it, I added some pieces of candied…
